Baby Blue™ is a lobster in a class of its own. It is smaller than the legal size for wild capture, making it a unique niche product. Since they have not undergone sexual maturation, this produces a meat quality with an outstanding texture and flavor that highly valued chefs know to exploit to the fullest. When lobster is served in a restaurant, everything is used — the shell is turned into chips and dip or for power in soups, bisques or as a dandering on dessert. Lobster Bonanza — A Full Evening of Taste Experiences
In February, Norwegian Lobster Farm invited to an exclusive 8-course Baby Blue™ bonanza. Under the direction of Arne Nese from Ekte Matglade, the lobster was prepared in eight different dishes. Throughout the evening, guests not only got to experience the unique taste of Baby Blue™, but also hear the company's inspiring story -- a 25-year journey of ups and downs, sustainable visions and the imminent creation of the world's first land-based lobster farming facility.

Rogaland Aquaculture Park — Partner for the development and commercialisation of new marine species
Norwegian Lobster Farm has in recent years been located in Rogaland Havbrukspark, a hub for growth and development in land-based farming of emerging species. With new websites on the way and a state-of-the-art display kitchen under development, further growth and innovation are being facilitated in the aquaculture park on Finnøy. Here, entrepreneurs and others can access modern, plug-and-play facilities with running seawater, meeting facilities, display kitchens and not least a community and a unique network of aquapreneurs and researchers.

With a unique product, proprietary technology and zero direct competition, the company occupies a unique position in the market. The plans ahead include an increase of production to 30 tonnes by 2026 and, in the long term, a further scaling based on the proven technology.
